How rare is it to see
Flowers bloom in March,
For rainbows to come before the storm,
To hear birds chirp at night,
To feel your hand holding mine,
To see snow fall in July,
For the sun to feel cool,
For the shade to feel warm,
To feel the warmth of your smile,
To ski in the summertime,
To swim in the wintertime,
To see stars as the sun rises,
To fall asleep to your gentle voice.

Rarities in nature don't mean that they are impossible, just out of the ordinary. I chose to compare rarities in nature to rarities in a finished relationship to really emphasize how out of the ordinary the narrator feels, since they are not with the one they love anymore.
